Ascorbic Acid, or Vitamin C as it is most commonly referred to is a naturally occurring organic compound. White to light yellow in appearance it readily dissolves in water and has a sour, acidic taste.
Ascorbic Acid has a wide variety of applications across several markets but is primarily associated with the food and drink industries. It acts as a dietary supplement to increase the levels of Vitamin C in food and drinks as well as acting as an antioxidant and an additive to improve the appearance and taste of many food products.
In the meat industry, ascorbic acid is used for its antioxidant properties and ability to help prevent oxidisation and colour changes during storage and shelf-life. In the fruit and vegetable markets, ascorbic acid inhibits the natural browning and discolouration of fruits whilst also helping to top up the nutritional value where vitamin C levels drop during manufacturing processes and storage.
In the manufacture of plastics, ascorbic acid is used to create the chemical reactions that create plastic. It helps to assemble molecular chains faster and with less waste than standard synthesis methods. Ascorbic acid is also a key additive in water purification, often used in conjunction with potassium iodine tablets. The addition of ascorbic acid creates a reaction with sterilised water removing the taste, colour and smell of iodine.
